Quick and Easy Paella

I'll go ahead and 'fess up to my cheats for this recipe. The shrimp I used was already peeled, deveined and cooked. All I had to do was thaw them. The sausage was also already cooked. Big time savers!

You'll need a large pan with high sides for this dish.

Quick and Easy Paella

  • 1 lb. smoked sausage, sliced
  • 1 lb. cooked small shrimp
  • 1/2 cup onion, chopped
  • 1 bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes, drained
  • 1 1/2 cups rice
  • 3 cups GF chicken stock
  • 1 TBS dried parsley
  • 1/4 tsp crushed red pepper (opt.)
  • Salt and Pepper to taste

Saute onion, garlic and bell pepper in olive oil until onion is translucent. Add chicken stock and rice, bring to a boil. Reduce heat, cover and let simmer until most of the water is absorbed (about 15 minutes). Add remaining ingredients, mix well. Cover and let simmer for another 10 minutes or so, until water is absorbed.
