1 cup quinoa
2 cups chicken broth
1 can diced tomatoes, drained
1 bunch fresh cilantro, chopped
In a saucepan, combine quinoa and chicken broth. Bring to a boil.
Add diced tomatoes. Reduce heat, cover and simmer for about 10 minutes.
Stir in cilantro, cover and simmer until water is absorbed (about 5 minutes).

Quinoa is really good for you. Everybody! It's the best grain you can get. We mix it with our oatmeal to get it's goodness in the morning.

Oh! I'm going to try this! My family just barely tolerates me when I serve quinoa, but this sounds really good. I also had forgotten about adding it to oatmeal, good idea!
